The Best Darn Vegan Breakfast: Grilled Cheese (Pesto) and All Natural Orange Juice

This Grilled Pesto is absolutely amazing! I never thought my beloved grilled cheese could be replaced with some healthier substitute and still send me to heaven, but boy was I wrong. The grilled pesto is in no way, shape, or form just some cheesy replacement. (Get it? Cheesy replacement.)  After years of battling acne and other hormonal imbalances I took a pledge to start limiting my dairy consumption which in result allowed me to explore food combinations I may have never even considered before. I’m no vegan, vegetarian, or raw foodie, but I am extremely conscious of the foods I intake and the possible effects it may have on my body . I’d like to call myself a name a good friend and myself coined after a night of in depth conversation exploring how to enjoy holidays after becoming more food conscious, a good old Gratitarian.

Gratitarian: is a person who is simply grateful for a meal, making the best decisions with what produce he/she has been given.

Now What’s For Breakfast! 

 Vegan Grilled Cheese Pesto and All Natural Orange Juice

The best darn vegan grilled cheese!
What You Need:
  • spelt bread
  • 1/2 avocado, sliced
  • 1/2 c spinach
  • vegan cheese (Daiya is really popular)
  • 1-2 tbsp coconut butter
  • [b]Pesto[/b]
  • 1/3 c basil, chopped
  • 1/4 c pine nuts
  • 1-2 garlic cloves
  • 1 c kale, chopped
  • 1/4 c extra virgin olive oil
  • salt/pepper to taste
Instructions :
  1. To make pesto add all ingredients to a blender and run until combined.
  2. Spread pesto sauce on both slices of bread.
  3. On one slice of bread add cheese, avocado and spinach.
  4. Top with the other piece of bread pressing it gently together.
  5. In a small fry pan heat up coconut butter.
  6. Cook sandwich on both sides for 4-5 minutes or until golden.
  7. Cut in half or in fours.
  8. Enjoy!
